My hope is by me sharing my dinner plan for the week will inspire and motivate you to plan ahead. It makes life easier and isn’t that the goal?
This week we have a Dodger game and my husband is traveling at the end of the week so it seems like an easy week to plan out dinners.
A note about the Dodger game. I bring my own food. Yup, I make something healthy and pack it up with me. My husband and kids are a little embarrassed (they’ve gotten used to it) but I’m there to enjoy the game not to feel guilty or yucky because I ate ballpark food. A baseball game doesn’t have to be about the food.
So this week starts off with hamburgers and hot dogs and a big salad. With family friends coming over with little kids I am keeping it super simple!
One of my sons requested calzones this week. I actually pick up pizza dough (I do whole wheat for me) from a local pizza place in town and roll it out to individual size pizzas. Everyone selects what they want inside their calzone – cheese, sauce, meat, veggies. Then to make the calzone, carefully lift the far edge of the pizza dough and pull it over the top toward you – you basically need to fold it in half. Crimp the edges so none of the filling can spill out. Place the calzones side by side on a floured baking sheet, (use 2 if needed), pizza stone or granite slab.
Preheat oven to 450 and bake for 15-20 minutes or until golden brown.
