I really needed some inspiration in the kitchen!! Here it is . . . Run Fast. Cook Fast. Eat Slow. by 2017 NYC Marathon Winner Shalane Flanagan. Runner or non-runner I highly recommend this new book for anyone- looking for healthy recipes from snacks, breakfast, lunch, dinner, sweets and more!
FYI, watching Shalene Flanagan win the 2017 NYC Marathon was one of the reasons I want to run this year marathon! She was the first US women in 40 years to win New York. Her story and how she raced completely inspired me and now her cookbook is inspiring me to get back into cooking and healthy eating.
I am officially past the 1/2 point of training for this year’s New York City Marathon (yeah!) and I feel great but my nutrition has not been on point this summer! I found it harder in the summer to always make those good choices. Maybe it was because there is less of a routine and the kids are all home. Maybe it was the weekly runs to Noah bagels because with teens and college-aged kids in and out of the house fresh bagels are an easy option and a hit for everyone! And oh, how I love fresh bagels and cream cheese. There were also tortilla chips and guac and even hot dogs – yup, too many carbs (and not the good kind) and not enough veggies, protein, and fruit. I am all about moderation and treating oneself to the occasional treat but here’s the thing nutrition is a crucial part of marathon training. Really healthy eating for everyone is crucial to how one feels and performs in everyday life.
The food I put in my body everyday will have an effect on how fast I run, recover and will even help prevent injuries. This book was just the inspiration I needed to get my booty in gear . . . with 9 weeks left we are in the countdown to race mode!
I’ve tried out a few recipes and OMG there are so many more that I can’t wait to make in the coming weeks. So far everything I have made has also gotten a 👍🏻from my hubby!
I think I could live on these Superhero muffins with coffee every morning and they actually were the perfect dessert last night when I was craving something sweet. 🙂
Pretzel Granola . . . OMG, yes! I threw a ziploc baggie full into my son and husband’s lunches today and my purse – the perfect salty snack!
One of my favorite things in the book is all her ideas for Power Bowls because really who doesn’t love eating bowls!! I tried a version of her Burger Salad Bowl and next, I want to try Pulled Pork Burrito Bowl and Green Envy Rice Bowl. Bonus Shalene and Elyse (her co-author) also share a ton of information in the book from healthy cooking and eating tips to fitness and running tips and stories. Quick Running Update
Over the next 6 weeks, I have lots of miles to cover! This week my long run is 17 miles. I get asked a lot if I get bored . . . I don’t. I have come to love the uninterrupted time to listen to podcasts, to hear new music on Spotify and if I am lucky a friend will run with me for that last hour of running and we can always find things to talk about.
Long runs are tough more mentally than physically which is really how a marathon is but talk about feeling like a badass when I’m done is awesome! 🙂
