Permission granted to be lazy on Sunday! Some Sunday’s we just have to give in to the laziness and it’s okay because in reality how often do we really do that! Not enough. It’s good and really necessary to recharge your body and mind!
Two cups of coffee this morning and I still wasn’t energized. I didn’t feel like doing anything so I didn’t, I kicked back watched some football with my husband and read the newspaper. And finally, around noon I went for a long walk down to the beach. I love living near the ocean! Movement is one of the best ways I know to increase my energy so I felt great when I got back.
The rest of my afternoon was more of a productive laziness . . . planning out the week ahead, cooking, baking some bread (more of that below), a quick run to the grocery store and I even read a little which is something I am trying to do more of. I actually couldn’t think of a better way to spend Sunday!

Cooking on a Sunday doesn’t feel like a chore, it’s actually relaxing on a Sunday but funny how it doesn’t feel like that during the week. And this Sunday I made chili. A perfect choice on a Sunday when football is on, the temperature is dropping and it’s getting darker earlier.
This is a simple recipe that you can put in the crockpot and set it on low for 6 hours or you can cook on the stove top and simmer for 1-2 hours.
Easy Chili Recipe
- 2 pounds lean ground beef
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 (16-ounce) can of black beans, rinsed and drained
- 1 (16-ounce) can of pinto beans, rinsed and drained
- 2 (14-1/2-ounce) cans diced tomatoes
- 2 to 3 tablespoons chili powder
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 teaspoons ground cumin
Cook first 4 ingredients in a large skillet or Dutch oven over medium-high heat, stirring until beef crumbles and is no longer pink; drain. Stir in beans, add the remaining ingredients.
For slow cooker: place mixture in 5-quart slow cooker. Cook at HIGH 3 to 4 hours or on LOW 5 to 6 hours.
For stovetop: cover and simmer for 1-2 hours.
Top with shredded cheese, diced avocado, and crushed tortilla chips.
And serve with cornbread.

Monday: Patty melts on sourdough and mixed green salad
Tuesday: Spaghetti and salad
Wed: Chicken and white bean soup
So let’s talk bread! Bread gets a bad rap. I try to eat low carbs like many of us but there is something loving and warm about freshly baked bread. And homemade bread is not only better quality it is also better for you. You know exactly what ingredients you are putting in each loaf and what you are leaving out! I got this recipe from the NY Times and this is the speedy version, the original recipe you let the dough rise overnight. I will try that one next. It really is no fail and so simple, 3 ingredients . . . flour, water, and yeast! BTW, it’s imperfect shape makes it even better!
Speedy No Knead Bread
- 3 cups four*
- 1 packet (1/4 ounce) instant yeast
- 1 ½ teaspoons salt
- Oil as needed
* I used whole wheat white flour
- Combine flour, yeast, and salt in a large bowl. Add 1 1/2 cups water and stir until blended; dough will be shaggy. Cover bowl with plastic wrap. Let dough rest about 4 hours at warm room temperature, about 70 degrees.
- Lightly oil a work surface and place dough on it; fold it over on itself once or twice. Cover loosely with plastic wrap and let rest 30 minutes more.
- At least a half-hour before dough is ready, heat oven to 450 degrees. Put a 6-to-8-quart heavy covered pot (cast iron, enamel, Pyrex or ceramic) in the oven as it heats. When the dough is ready, carefully remove the pot from oven. Slide your hand under the dough and put it into the pot, seam side up. Shake pan once or twice if the dough is unevenly distributed; it will straighten out as it bakes.
- Cover with lid and bake 30 minutes, then remove the lid and bake another 15 to 30 minutes, until loaf is beautifully browned. Cool on a rack.
This is bread that is worth the treat . . . it’s going to be a really good piece of bread. The best bread is always fresh baked!
