Two teenage boys in a house means there are actually 5 meals – breakfast, lunch, after school, dinner, and late night. It never ceases to amaze me how much they can actually eat and still stay thin . . . oh to have a metabolism of a teen!
Snacks have been replaced with meals so leftovers are somewhat of a necessity in our house. I actually will double certain recipes just to ensure there are plenty of leftovers.
Last week I was on my game when it came to cooking and dinners! It is amazing how a little bit of planning for the week can make that part of the day so much less stressful! It’s so worth taking that little bit of time to plan . . . here’s my meal plan for the week.
I am attempting homemade fried chicken for the first time ever for my husband’s bday dinner. Not a healthy option but birthdays are for special treats! The real test will be if I can pull this off!

The rice ball casserole is a one dish meal that is health comfort food, it’s great for a crowd and yields lots of leftovers which is one reason I love making it but it’s also one of my family’s favorite. And it’s a one dish meal . . . score!!
The chicken for the burrito bowls is made in an Instant Pot. Have you tried one? I bought an Instant Pot from Amazon earlier this year. I was so nervous at first because it’s pressure cooking . . . yikes but I have really come to love it and find I’m using it more and more. It makes the best hard boiled eggs, perfect every time! I’m still finding new recipes to use it but I love the speed of it and it’s a great change up to from the crockpot.

Who doesn’t love sloppy joes and the healthy twist on this recipe is it’s sweetened with dates! I serve it on hamburger buns for my kids and and over baked yams or potatoes for hubby and I.
•1 lb ground beef
•½ cup chopped onion
•¾ cup chopped green pepper
•1 8oz can tomato sauce
•1 tablespoon tomato paste
•1½ tablespoons apple cider vinegar
•1 tablespoon dijon mustard
•½ teaspoon minced garlic
•½ teaspoon dried parsley
•½ teaspoon salt
•5 medjool dates, pitted
•⅔ cup water (reserved)
Brown the ground beef in a large pan over medium/high heat and add the onion. Drain any excess grease.
Reduce the heat to medium and add the green pepper,apple cider vinegar, dijon mustard, garlic, dried parsley, and salt. Mix well.
Meanwhile, in a small pot, bring ⅔ cup water to a boil and add the dates. Boil 30-60 seconds, just long enough to significantly soften the dates. Remove the dates from the pot (reserving the water for later)
Place the dates into a food processor or blender, then add tomato sauce, and tomato paste. Blend well then add to the beef mixture.
Add 2 tablespoons of the reserved date water.
